Low FODMAP friendly brownies

I absolutely LOVE brownies. But since I have been following the Low FODMAP diet, I have struggled to find any which taste decent and most importantly, gooey! But FINALLY, there is a light at the end of the tunnel!

This recipe has been made up using a little of online research and a little tweeking of my own. So without further ado, let’s get down to the important stuff!

Ingredients

250g granulated sugar
140g unsalted butter
65g dark cocoa powder
1/2 tsp sea salt
1 tsp vanilla extract
2 large eggs
65g gluten free flour (I use Dove’s farm)
1 bag of dark chocolate chips (optional)
A drop of orange extract/ salted caramel extract (optional)

Method

1. Preheat oven to around 180 degrees. Line a baking pan with some baking paper. Make sure you leave an overhang on 2 opposite sides.

2. In a large, microwave-safe bowl, combine the sugar, butter, cocoa and salt. Microwave in 20 to 30-second bursts, stirring each time, until butter is melted. Stir until combined (please note, the mixture will be very grainy). Then, stir in the vanilla extract.

3. Add the eggs one by one, stirring until combined after each one. Stir until the batter is thick and shiny. Add the flour and stir until thoroughly combined and no white streaks remain. Stir in chips and any additional flavouring extracts (like the orange or salted caramel) if using. Spread evenly in prepared pan.

4. Bake until a toothpick comes out with a moist crumbs, 30 to 35 minutes. The top should be puffed and shiny and the brownies pulling away from the sides of the pan. Cool completely on a wire rack. Cut into however many slices you wish.

Tip – For a perfectly clean cut, put the cooled brownies into the fridge until cold and then cut them afterwards. Additionally, these are freezer friendly as well. So great for storing away and getting out when friends are coming over! Just defrost at room temperature and then you’re ready to enjoy!

I have made these brownies numerous times. The classic ones are without any orange or salted caramel extract. However, adding these little extracts can be a great touch if you want to change the flavour a little! Additionally, if you don’t want the brownies to be too rich, I’d recommend not putting in the chocolate chips.

Please note – This recipe is just a guide and some steps may vary, depending on circumstances. Trust your own judgement and if the brownies need a little extra in the oven/or more flavour, then do it! Also, add whatever you want on the top of them to make them look pretty! The photo above features some sprinkles on the top because that was what I fancied!
